Ernest Doe mixes business with pleasure

In July 2012 Ernest Doe, an Essex based agricultural firm, chose the Cookery School at Braxted Park as the venue for a two day staff training and team building event.

Eight staff from Ernest Doe arrived at Braxted Park at 8.30am on day one, where they were served breakfast in the main Braxted Park house.  They then moved into the conference room area of the Cookery School at Braxted Park to begin a half day training session.

 Following a light lunch, delegates were joined by Mark Webb, a top chef from the Cookery School at Braxted Park who took them through a bespoke three hour cookery course.  This took place in the purpose built and fully equipped kitchen, opened in November last year.  Through a combination of demonstration and hands-on activities, the team produced a three course meal ready to enjoy later in the evening alongside their guests.  This included goat's cheese and red onion marmalade tart, rack of lamb with a herb crust, ratatouille and dauphinoise potatoes with chocolate roulade for  dessert.

Following this three hour course, the team from Ernest Doe checked into the Stable Rooms - 12 beautiful, newly renovated bedrooms on the estate - to change for dinner. 

At 5.30pm each delegate was joined by a guest at a drinks reception in the main house at Braxted Park, and then sat down to enjoy the food they had prepared throughout the day.  This was served by the fully trained waiting team at Braxted Park, and was accompanied by a specially chosen wine list.

Following an overnight stay in the Stable Rooms, the team from Ernest Doe and their guests were served a continental breakfast, before embarking on a second training session for the rest of the morning, held in the unique surroundings of the Braxted Park Cottage meeting room.
